How to cook perfect fluffy rice
Foolproof rice, awesomely fluffy without a rice cooker? Yes - here goes.
How much rice per person?
½ cup or 100g is a good amount per person.
Rinse or soak?
I recommend rinsing the rice several times until the water runs clear.
How much water to rice?
long grain: water - 1 : 1.75
basmati & brown: water – 1 : 2
or 1 inch water above surface of rice
How to cook foolproof rice?
Add the required amount of water to the rice in a pan with a fitting lid. Add salt and fat: butter or oil. Cover, bring to the boil and cook for 3 minutes. Turn the heat down to minimum and leave to simmer for 20 minutes (25 for brown rice). Don't peek!
Take the pan off the heat but don’t lift the lid; leave it to stand for 10 minutes. Uncover, fluff up, admire.
What about rice for egg fried rice?
It can left over, cooked as above. Or you can bring a pan of salty water to the boil, add rice and boil it for 8-10-12 minutes (basmati - long grain - brown), like pasta. Drain and leave to cool.
Either way, for egg fried rice, beef fried rice or any other fried rice, RICE MUST BE FRIDGE-COLD. Otherwise it will be mushy and clumpy.
