The best way to cook green vegetables

Broccoli, cauliflower, green beans, sugar snap peas, mangetout, even sprouts – don’t boil them in water. Don’t shake off the water after rinsing, it will be enough moisture to cook them without getting soggy. Add a knob of butter, place on medium-high heat, season and cover with a lid. 5 minutes and ready.
