Do you nibble on an unbuttered toast on the fly? Or scoff kids’ leftover granola while loading the dishwasher? Perhaps you just gulp coffee looking forward to a pastry from Pret in town?

Even the most organised and put together amongst us do not spend much time or attention over weekday breakfasts. Understandable, but how about making up for it at the weekend? A leisurely family brekkie is the perfect start to the weekend, and you can both treat and nurture yourself and your household.
Here is a selection of great weekend breakfast recipes – and not all of them feature oats!
I know people whose weekend starts with the best treat: porridge. Cooked properly in a pan, oats soaked overnight make it a five minute job. It’s the perfect porridge, indulgent with raisins and topped with creme fraiche, but also a healthy breakfast that will keep you going till lunch.
This requires a minute to mix the batter but what a wonderful result: warm scones for breakfast! Banana scones made from just one overripe banana make excellent brekkie, especially delightful toasted and buttered.
Something special for the weekend: soufflé omelette with Parmesan is like a fluffy, savoury meringue that you can have for breakfast. Another way to have your eggs in the morning!

These buttery cornmeal muffins with glace cherries are gluten free and enormously satisfying. Crunchy around the edges, the jewelled glace cherries intersperse rich yellow cornmeal crumb. Thirty-five minutes from start to the first bite!

Another delicious and gluten free breakfast: buckwheat banana fritters. Smashed bananas in buckwheat pancake batter, and a drizzle of honey is a must!
For the fans of savoury breakfast, how about a plate of fried sliced mushrooms, cooked in butter and a little oil? Cook them for 10-15 minutes until caramelised and crisp. A couple of eggs cracked into them at the end, a toast on the side and it’s a treat only a little short of full English.
American-style buttermilk pancakes, with optional blueberries, and the mix takes only a minute to make. Served them with bacon and maple syrup for an indulgent weekend breakfast.
Breakfast quesadillas are better than a toasted cheese sandwich. The filling is mushrooms, tomato, avocado and bacon in any combination, vegetarian or not. Tip: it’s easiest to flip a quesadilla when it’s folded in half over the filling, with a fish slice.
