No dressing salad dressing

The best is often the simplest, likewise this method of dressing green salad. It works best with firmer leaves like iceberg, cos or romaine.

Cut or break lettuce leaves into largish chunks and place in a bowl. Sprinkle with a large pinch of sea salt flakes. Season with about seven twists of the black pepper mill. Drizzle with runny honey - eyeball a teaspoonful. Squeeze half a lemon all over the lettuce and drizzle good olive oil - a bit more than you'd think is enough; probably a couple of tablespoons in total.

Now get your hands dirty: toss and gently massage the seasoning into leaves with your hands. Wash hands. The best green salad is ready to go.
