How to make crispy noodles
Don't try to crispen up rice noodles - they will just disintegrate if cooked too much. For crispy, use egg noodles.
Soak the egg noodles as per instructions on the packet. If the instruction says to boil them, still only soak them in boiling water for the recommended cooking time. Drain, rinse with cold water and run some groundnut oil through the noodles.
Heat a wok until smoking, add some oil and flavourings or a spicy paste of your choice, add the noodles and press them down in the wok until they start catching to the bottom. Turn them over and press again, repeat until they are more or less evenly crispy.
Extra tip: fried crispy pasta is also awesome, just use plain cooked leftover pasta of any shape.
