Marinating meat or fish with maximum flavour

Marinating meat or fish is sometimes a bit hit and miss - it sits in the marinade for ever and then not much of the flavour comes through. Piercing the meat with a pin or skewer and then wrapping it in cling film or tin foil will help the flavours penetrate.
