Draining water from spinach leaves in a salad spinner

If you buy organic spinach from the market, it will be much tastier than the clean supermarket stuff, but full of mud, soil and an odd snail. Put it in sink full of cold water, rinse well each leaf and dry it in batches in a salad spinner. This is very useful if you want to just bake it, or add it to dishes without blanching first.
